INNOVATION IN PUPUT FISH PROCESSING TRANSFRORMED TO LOW-SALT, HIGH-VALUE DRIED PUPUT FISH

Abstract

MorDry Fish is an innovation in processing Puput fish-based seafood that transformed into a low-salt dried fish rich in protein and omega-3. It aims to increase the added value of Puput Fish, extend the shelf life, and provide solutions to the health impacts of excessive salt consumption. With 80% lower salt content than traditional salted fish, this product is safe for health-conscious consumers without compromising the distinctive taste. MorDry Fish production utilizes local raw materials from Sepuk Laut Village, empowering local residents in the processing process, from sorting to packaging. This step not only increases community income but also strengthens the solidarity of coastal communities and supports environmental sustainability by utilizing fish waste as aquaculture feed. With a vision to make MorDry Fish a healthy and innovative food icon, MorDry Fish combines the taste of tradition with modern quality. Every bite brings a sense of pride in local products that are healthy, environmentally friendly, and full of innovation.
