ANALISA PROKSIMAT, UJI FITOKIMIA DAN AKTIVITAS ANTIOKSIDAN PADA BUAH TAMPOI (Baccaurea macrocarpa)
Abstract
Buah-buahan adalah penghasil antioksidan yang sangat baik dalam proses penangkalan radikal bebas penyebab oksidasi dalam tubuh. Buah tampoi (Baccaurea macrocarpa) merupakan buah-buahan yang tumbuh di Kalimantan Barat. Pengujian aktivitas antioksidan dari buah tampoi (B. macrocarpa) dengan metode DPPH. Penelitian ini melakukan pengujian analisa proksimat, uji fitokimia dan aktifitas antioksidan terhadap buah tampoi (B. macrocarpa). Hasil penelitian analisis makronutrien menunjukkan kandungan air 61,9%, abu 0,9%, lemak 1,1%, serat 2,2%, protein 1,5% dan karbohidrat 34,6%. Analisis fitokimia hasil penelitian buah tampoi mengandung senyawa alkaloid, saponin dan flavonoid. Uji aktivitas antioksidan menunjukkan nilai EC50 33,11 μg/ml.
