ANALISIS ASAM AMINO DAN MINERAL ESSENSIAL PADA UBUR – UBUR (Aurelia aurita)
Abstract
Ubur – ubur (Aurelia aurita) termasuk sejenis binatang laut dalam kelas Scyphozoa, berbentuk payung berumbai, berbau amis dan gatal apabila tersentuh. Binatang laut ini memiliki asam amino yang bagus sehingga memiliki potensi bahan baku tetapi belum banyak dimanfaatkan. Ubur – ubur juga dimanfaatkan sebagai bahan makanan yang bernilai tinggi. Penelitian ini bertujuan untuk menentukan jenis dan jumlah asam amino, mineral essensial yang terdapat pada ubur-ubur. Kadar air dan kadar abu diuji menggunakan metode termogravimetri. Pengujian asam amino menggunakan metode High Performance Liquid Chromatography (HPLC). Pengujian mineral essensial menggunakan metode Atomic Absorption Spectroscopy (AAS). Hasil analisis yang dilakukan adalah kadar air 93,88 % dan kadar abu 1,72 %. Kandungan asam amino essensial antara lain arginin 1,58 %, leusin 1,11%, dan lisin 0,83%. Kandungan asam amino non essensial antara lain glisin 3,10%, asam glutamat 2,73%, dan asam aspartat 1,75%. Mineral essensial adalah kalsium (Ca) 0,012 %, fosfor (P) 0,089 %, besi (Fe) 0,010 %, kalium (K) 0,224 %, natrium (Na) 5,76 %, magnesium (Mg) 0,022 %.
