STUDI AWAL PEMISAHAN AMILOSA DAN AMILOPEKTIN PATI UBI JALAR (Ipomoea batatas Lam) DENGAN VARIASI KONSENTRASI n-BUTANOL
Abstract
Penelitian tentang studi awal pemisahan amilosa dan amilopektin pati ubi jalar (Ipomoea batatas Lam) telah dilakukan dengan variasi konsentrasi n-butanol. Penelitian ini bertujuan untuk memperoleh hasil analisis proksimat. Rendemen fraksi amilosa dan amilopektin pati ubi jalar yang difraksinasi dengan variasi konsentrasi 10%, 20%, 30% dan 40% n-butanol, serta mengkarakterisasi senyawa amilopektin dari pati ubi jalar dengan spektrofotometer IR. Hasil analisis proksimat pati ubi jalar menunjukkan kandungan air 61,51%, abu 1,7%, lemak 2,12%, protein 1,1%, dan karbohidrat 33,57%. Identifikasi amilosa dengan iodin menghasilkan warna biru keunguan, sedangkan amilopektin menghasilkan warna coklat kemerahan. Persentase rendemen fraksi amilosa tertinggi berada pada konsentrasi n-butanol 40% sebesar 46,69% dan fraksi amilopektin optimum berada pada konsentrasi 30% n-butanol sebesar 52,25%. Spektrum fraksi amilopektin menunjukkan serapan pada bilangan gelombang 3425,34 (uluran O−H), 1647,10 (uluran C=O), 1022,20-1157,21 (uluran C−O), 522,67-609,46 (uluran C−C−O), 435,88 (uluran C−C−C). Adanya gugus karbonil (C=O) pada spektrum tersebut disebabkan proses oksidasi dari amilopektin.
