Aplikasi Metode Fraktal untuk Identifikasi Kadar Gula pada Salak Berdasarkan Pola Kulitnya

Penelitian ini menerapkan metode fraktal untuk identifikasi kadar gula pada salak berdasarkan pola kulitnya. Proses penelitian terdiri atas beberapa tahapan yaitu uji kadar gula, pengolahan citra, analisa fraktal citra dan korelasi antara kadar gula dengan dimensi fraktal. Uji kadar gula bertujuan untuk mengetahui persentase gula dalam buah salak. Pengolahan citra dimulai dengan mengubah citra berwarna (RGB) menjadi citra grayscale, kemudian dilanjutkan dengan proses thresholding dan binerisasi. Analisis fraktal bertujuan untuk menghitung dimensi fraktal dari tiap sampel. Nilai dimensi fraktal dihubungkan dengan kadar gula salak untuk melihat korelasi antara kedua parameter. Hasil penelitian menunjukkan bahwa semakin tinggi tingkat kerumitan tekstur pada buah salak bersesuaian dengan tingginya kadar gula dengan nilai korelasi sebesar 0.9975. Tingkat kerumitan ini direpresentasikan oleh nilai dimensi fraktal yang tinggi.
