IDENTIFIKASI SALMONELLA DAN SHIGELLA PADA CINCALOK YANG BEREDAR DI KOTA SINGKAWANG

Cincalok is one of the fermented shrimp products typical of Singkawang city. Contamination of pathogenic bacteria in food can cause various diseases when consumed. This study aims to determine the density and genera of pathogenic bacteria (Salmonella and Shigella) found in cincalok products distributed in Singkawang City. The research was conducted from June to August 2024, in the Microbiology Laboratory of the Department of Biology, FMIPA Untan. In this study, a dilution series was carried out with the spread plate method to calculate the density of bacteria. Bacterial isolates were then characterized macroscopically, microscopically, and biochemical tests. The identification process refers to Bergey's Manual of Determinative Bacteriology. The density of bacteria in sample A was 6.3 x104 CFU/mL, in sample B was 2.46 x103 CFU/mL, and the density of bacteria in sample C was not found. The bacteria found belonged to the genera Escherichia and Salmonella.
